Bread nutmeal Ingredients:

1 cup pecan, almond or pumpkin seed meal

1/2 cup flaxseed

1/2 cup flax meal

3 Tbsp psyllium husk fibre

2 tsp baking powder

1/2 tsp bicarbonate of soda

1 Tbsp xylitol

1/2 tsp salt

2 large free-range eggs

2 Tbsp coconut oil or butter

3/4 cup lukewarm water

2 Tbsp sesame seeds

2 Tbsp poppy seeds


Preheat oven to 180 degrees C.

Mix all dry ingredients together.

Whisk eggs, mix them into dry ingredients.

Melt oil/butter in warm water and pour into the dough.

Mix properly, let dough rest for 2 minutes.

Scoop dough into buttered loaf pan and sprinkle with the seeds.

Bake for 45-50 mins

Top tip: To make your own pecan, almond meal, pumpkin seed or flax meal,  I used my Nutribullet (the two-blade unit) to grind whole raw almonds/pecans/pumpkin seeds/flax seeds. Works wonderfully!
