Healthy Banana Bread

This one is healthy, low carb, gluten free and banting friendly. You can decide if it’s sugar free as well ;-)

Ingredients”

  • 2 ripe bananas
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon honey
  • ½ cup coconut oil
  • 3T melted butter
  • 2 cups flaxseed flour (can substitute with other flours such as almond/coconut flour)
  • ½ T cinnamon
  • ½ T nutmeg
  • ½ teaspoon sea salt
  • 1 level teaspoon bicarbonate of soda
  • 1/4 cup xylitol/honey/sweetener of choice

DIRECTIONS

  • Preheat oven to 170°C
  • Place bananas, eggs, vanilla, honey, xylitol, butter and oil in a food processor/blender and blend together
  • Add flour, salt, spices and bicarb
  • Pour into a bread baking pan
  • Sprinkle with seeds if you prefer
  • Bake for +- 35 minutes
  • Remove from oven and allow to cool
